Kaili and I thought you might like a delicious breakfast recipe idea for your mom from Kaili’s Creative Kitchen.
Overnight Baked French Toast
1 loaf whole wheat French bread or cinnamon bread sliced 2 inches thick
6 local eggs
1 ½ cups organic half and half or soy creamer
½ cup local honey or raw sugar
2 tsp pure vanilla
1 tsp cinnamon
1 tsp sea salt
Zest from one orange (optional)
Coconut oil or butter to grease baking pan
Fresh strawberries, blueberries, or thawed frozen cherries; shaved dark chocolate, pure maple syrup, whipped cream or powdered sugar… or your mom’s favorite fruit.
Using coconut oil or butter, grease a 9×13-in baking pan. Arrange slices of bread in rows and fill in any spaces with extra bread.
In a medium bowl, whisk eggs, cream, honey, vanilla, cinnamon, orange zest and sea salt until frothy. Pour over bread and flip one time so all bread is covered in mixture. Cover the pan with foil and refrigerate overnight.
In the morning, preheat the oven to 350 degrees F. Bake for 40 minutes or until puffed and lightly golden. Serve warm with your favorite toppings!
